Triscuit Cheese Bites

This is one of my all time most viewed recipes.  Everyone loves them, and they are so simple to make.  They would be a great starter to your Valentines Day meal.  

Prepare the spread up to 3 days ahead. Then spread the crackers a few hours before you will be serving them.  Cover and refrigerate. Pop them in right when guests arrive.  (but keep a close eye on them.) Only takes a couple of minutes under the broiler.  There are so few ingredients you won’t think they can be that good, but they are!  

Triscuit Cheese Bites
Ingredients:
1 cup grated cheddar cheese
1/3 cup grated Parmesan cheese
1/3 cup Hellman’s mayonnaise
4 green onions, green part chopped
1/2 box Triscuits crackers

Instructions:
Mix together first 4 ingredients.  You can cover and refrigerate the cheese mixture for up to 3 days. Spread about 2 tsp. on a Triscuit cracker.  Place on a cookie sheet.  With rack placed 2 down from the top (a little above middle oven) Broil 1 to 3 minutes until golden. Serves 6 to 8.  Double recipe for a larger group and use the whole box of crackers.  Plan on 4 to 5 per person.
