Taffy Apple Pizza

This recipe is from my cousin Susan in Cape Girardeau Missouri. She is the food editor of the local paper and believe me, she knows a good recipe when she sees one. This is best made and served on the same day. The crust gets a little soggy if leftover.

 

Taffy Apple Pizza
1 package refrigerated peanut butter cookie dough (20 Oz.) I had to go to 2 different stores to find this. It is in the dairy case with the other Pillsbury and Nestles cookie doughs.  Found it at Krogers.

 

Knead 3 Tbsp flour into the entire tube of cookie dough. Use a ziploc bag and let the kids mash the flour into the dough.

Press onto pizza pan or press into a 9X13 inch rectangle on a cookie sheet. Make a slight ridge around the outside edge. Bake at 350 about 15 minutes or until the whole cookie crust is brown. Cool completely.

Beat 8 oz. cream cheese (fat free cream cheese works, it is just a little runny) and 1/2 cup brown sugar and 1/2 tsp vanilla until fluffy. When crust is completely and I mean completely cool, spread the cream cheese over crust.

 

 

Chop and peel 2 large or 3 medium Granny Smith apples. Place in a bowl and pour one cup of Sprite or 7-up over them. Toss to coat then drain. Place the apples on the cream cheese mix. You can slice the apples and line them up all pretty but it is harder to cut later. Looks good though.

Drizzle 1/4 cup caramel ice cream topping over apples

 

 

Sprinkle 1/2 cup chopped peanuts over top
Serve in the next couple of hours or cover and refrigerate. Does not keep over night very well. But it doesn’t matter because it will all be gone.
