Taffy Apple Salad

Easter Family Favorites

Thought I would give you a few of our family’s favorite recipes for Resurrection Sunday.  
This one is Erin’s favorite.  Sorry, the photos will have to come later.  This one comes from an old church cookbook.   The originator was Diane Lazarus.  It is something your grandmother would have made.  

Taffy Apple Salad


1 large can crushed pineapple
2 1/2 c. mini marshmallows
Drain pineapple reserving the juice.  Mix the pineapple and marshmallows together in a large bowl.  Cover and refrigerate overnight.  

1 egg
1 Tbsp. flour
1 1/2 tsp. vinegar
1/2 cup sugar
Reserved pineapple juice

12 oz. Cool Whip

 In a small saucepan beat egg, add reserved pineapple juice, flour , vinegar and sugar.  Heat and stir constantly until thick.  Cool completely.  Mix sauce and Cool Whip together.  Add to marshmallow mixture. 

5 medium Granny Smith Apples, peeled and cut into 1/2 inch chunks.  

Add apples and refrigerate a couple of hours.  

1 cup cocktail peanuts
Add  peanuts just before serving.  

Great with ham and scalloped potatoes.
