Almond Baby Greens Salad

Almond Baby Greens Salad


6 oz mixture of baby spinach and baby spring mix
(or all baby spinach)
1 tart apple (honey crisp or granny smith), thinly sliced
10 strips bacon, browned and crumbled
1 cup dried cranberries
3/4 cup honey roasted sliced almonds, or toasted sliced or slivered almonds

Layer salad ingredients in a bowl.  

Cut up bacon with scissors before you fry it.  Gets done quicker and you don’t have to wait for it to cool to crumble it.  It is ready to use. 


Dressing:

1/4 cup sugar
3 Tbsp apple cider vinegar
2 Tbsp finely chopped onion
1/4 tsp salt

1/3 cup olive oil

Place first 4 ingredients in a blender and blend until smooth.  Slowly add oil in a thin stream while blending.  Refrigerate until ready to use. 
  

Toss salad with dressing just before serving.
