Chocolate Eclair Dessert

Your mom or your grandma may have made this dessert for you.   It is not new, but I had a craving for it the other day and realized it was not on the blog. Makes a great Valentines dessert for your family.
You have to let it sit covered in the frig for at least 24 hours after you make it, so start a day early.

1 box graham crackers
2 (3 oz.) Jello instant french vanilla pudding
3 cups milk
12 oz. Cool Whip, thawed

Line a 9X13 pan with whole graham crackers.  (8X8 pan is shown in the photo,  I was making a half recipe)

Using a whisk, make the pudding with the 3 cups milk.  Then fold in the Cool Whip.
Spread one half the pudding mixture on top of the graham crackers.  Spread the other half of pudding on top of the second layer of graham crackers.  Place one more layer of graham crackers on top.  Make icing and spread it over the top layer.

Icing:
3 Tbsp softened butter
1 1/2 cup powdered sugar
1/2 cup cocoa
1/3 cup milk
2 tsp. corn syrup
2 tsp. vanilla extract

With a an electric mixer, cream butter, powdered sugar and cocoa.  Slowly add milk, beat until smooth. Add corn syrup and vanilla extract. Beat until smooth.  Will be runny, not like normal icing.

Pour over crackers and spread to edges to ice top of dessert.  Cover with foil, not plastic wrap, and refrigerate at least overnight, 24 hours even better.
