As you approach the holidays, don’t forget about Chicken Enchilada Casserole. It is so great to make ahead of time. I don’t have much luck with freezing sour cream. But if you have the chicken cooked and cubed and frozen, you can throw it together in just minutes. (I just recently discovered that they make tortillas fresh at Krogers . Would be great in this recipe.) Someone posted recently that you can now order Stokes green Chili sauce online if you can’t find it in your area. Thanks for posting that whoever you are!!!!!!
