5 Course Mexican Fiesta: Fiesta Tossed Salad

The tortilla strips that you make for the Luna de Noche Chicken Tortilla Soup are also good as croutons served on this lettuce salad.

Fiesta Tossed Salad
Ingredients: 
Romaine Lettuce, cut and rinsed in a collander with cold water, drain on paper towel.

1 small can whole kernel corn (or shoepeg corn) drained
1 small can black beans
1 small tomoto diced
1 bunch green onions, tops diced
1/2 cup shredded Monterey Jack or cheddar cheese

Instructions:
Place lettuce in a salad bowl. Top with rest of ingredients. Place a damp paper towel on top and refrigerate until ready to serve.

Dressing:
2 cups Ranch dressing (any brand)
1/2 cup salsa (any brand)
Mix together in bowl and refrigerate until ready to serve. Adjust quantity for number of people you are serving. Allowing 1/4 cup of Ranch per person.

Serve salad with Tortilla strips as garnish.
