Green Chile Artichoke Dip

There are about a thousand artichoke dip recipes out there. How do you decide?   Let me help.  This is the BEST one.   I have made it over a hundred times and given the recipe out 500 times.  (have you caught on yet that I exaggerate?  It runs in the family.) So easy and you can make it hours or even days before and just pop it in the oven and bake for 30 minutes.  Yum!

Green Chile Artichoke Dip
1 (14 oz. ) can artichoke hearts, small, med or large (not marinated)
1 cup mayonnaise
1 cup grated Parmesan cheese (in green plastic container)
1 (4 oz.) can mild chopped green chiles
1 cup shredded mozzarella cheese

Drain and chop the artichokes.  Mix all ingredients together in a medium bowl.  Put in an ovenproof pan.  Pie plate works good. Or you can double the recipe and serve in a 9X13 baker.  Bake 30 minutes at 350 degrees.  Add 15 minutes for a 9X13.  Serve with tortilla chips or Wheat Thins (Toasted Chips in a bag).

***Entertaining note: 
When having a large crowd, don’t put all the appetizers in one place.  Cousin Eddy will come in and sit right down in front of it and nobody else can get to it.  I doubled this recipe and put it in 4 small pottery bakers to serve in several different places or down the middle of my island.
