Orange Sweet Potato Casserole with Crunchy Topping

As you will see if you look through my blog,  I am not a vegetable person.  Sorry.  Just is what it is.  So I have been searching for a good vegetable to blog for you for Thanksgiving.  It gets hard to come up with new stuff all the time.  My son in laws like sweet potatoes so I make them just to appease them.

My cousin Susan and I concocted this last Easter by putting a couple of recipes together and it turned out really good.  Sorry no photo.  There will be one after Thanksgiving day.  You will just have to trust me.

Topping
1/2 cup brown sugar
1/3 cup flour
1 cup chopped pecans
1 tsp. orange zest
1/3 cup melted butter

Casserole
2 large cans sweet potatoes, drained
1 stick butter, room temperature
2 eggs
1/4 cup orange juice
1/2 cup milk
1/3 cup chopped pecans
1/2 tsp. salt
1/4 tsp. black pepper

Mash sweet potatoes and butter together.  Then stir in rest of ingredients.  Place in a greased 9X13 or oval baker.  Bake for 30 minutes until heated through and topping is crunchy.
